    Today I'm going to share a Keto recipe that uses one of the tastiest weapons in the Keto cook's arsenal: blueberries. I'm going to show you how to make a quick and easy sugar-free blueberry jam.

    It will be fruity, sticky and delicious. 🥰

    Yep, this recipe is a total yum.

    You only need five ingredients to make it, and one of those ingredients is water. Do you even need to count water as an ingredient? Unclear. Let's move on to some questions.

    Are blueberries Keto? 💬

    Yes, blueberries are one of the lucky few fruits you are allowed to eat on the Keto diet.  You’ve got everything in the berry family, and not much else.  Other than that, you can basically just have lemons and limes.  But at least we can make lemonade out of them.

    What are the carbs in blueberries? 💬

    Each ½ cup serving of raw blueberries has 11 grams of carbohydrate and 2 grams of fiber.  That means that it has a total net carb amount of 9 grams.  (For more on why we only calculate net carbs, see my Keto Beginner’s Guide.). I’ve heard  Keto vloggers refer to blueberries as “bluebs” but I don’t recommend that you do that.

    Annnnyhoo.  Here’s what you’ll need to make Sugar Free Blueberry Jam:

    Ingredients 🫕

    • Fresh or frozen blueberries
    • water
    • fresh lemon juice
    • Swerve Granular or Swerve Confectioners
    • Xanthan Gum

    What is Swerve Sweetener? 🍚

    Swerve is a sugar-free erythritol sweetener. It's got zero calories and zero net carbs, so it can be used in just about everything. You can find it in larger grocery stores or online on Amazon, and you shouldn't pay more than $7.50 for a bag. Unless you buy the big 48oz bag, which is $25.00. (They really don't cut you a break when you buy more, do they?). It comes in granulated, powdered, and brown sugar forms.

    So it works for anything that requires sugar.

    What is Xanthan Gum? 💬

    Xanthan Gum is one of the best-kept secrets of Keto dieting.  It is a white powder that thickens soups, sauces, gravies, and jams.  It also acts as an emulsifier to bind moisture and prevent foods from separating.  You can use it in Keto cookery to replace corn starch and white flour as thickening agents.

    You only need to use a tiny amount to thicken any liquid. 

    Step 2 Thicken healthy Sugar-Free Blueberry Jam

    Instructions 🧾

    1. Mix together blueberries, water, sweetener and lemon juice in a sauce pan and bring to a boil.
    2. Lower heat and simmer for 15 minutes, stirring often.  The mixture should thicken considerably.  
    3. Taste for sweetness, and add more, in tablespoon measures, until it reaches the desired sweetness.
    4. Sprinkle Xanthan Gum over blueberry mixture and quickly whisk it in. Cook for 2 minutes more to thicken further.
    5. Cool to room temperature and then pour jam into a resealable container and store in the refrigerator for up to 3 months.

    It only takes about 20 minutes. ⏲️

    So soon you'll have a very tasty blueberry jam with only 2g net carbs per serving. You can eat it on so many things. I just had a lovely slice of Kiss My Keto Zero Carb Bread that I toasted and topped with the jam. You could also spread it on homemade Keto waffles or yeast bread. Or you could do like the Swedes, and eat it with meatballs.

    So many ways to enjoy blueberry jam, so little time! 😍

    • 4 cups (14oz) blueberries, fresh or frozen
    • ¼ cup water
    • 2 tablespoons fresh lemon juice (from 1 lemon)
    • ¼-⅓ cup Swerve Granular or Swerve Confectioners
    • ½ teaspoon Xanthan Gum

    Instructions

      All the Keto Jelly/Jam recipes that I have seen (including yours) say to refrigerate or freeze the end product. Is it possible to can in a water bath or pressure cooker in order to be able to store on a shelf like I do with my Low Sugar recipes (using Pectin)?

        I haven't ever canned this jam, but I think that a water bath should work.

      Not sure about the carb count. 4 cups of blueberries and 18 g each is 72 g.

      1 1/4 cups is equivalent to 20 tablespoons which is 10 servings. Therefore, the totalNet grams is closer to 7 or double your suggestion.
      Maybe your serving size is 1 tablespoon not 2 tablespoons.? Thank you

        Good catch. Looks like I did calculate for 1 tablespoon rather than 2 tablespoon servings. Just fixed it. Thanks for letting me know!
